A healthy dip for flat bread or vegetables that is low in fat and sodium.  It can also be used as a spread on sandwiches instead of butter or mayonnaise.

1 lb dried chick peas
1/4 tsp baking soda
7 1/4 cups water
1 1/2 tsp
salt
2 cloves minced garlic
1/3 cup tahini
1/3 cup lemon juice, preferably fresh squeezed
1/4 cup extra virgin olive oil

 

Makes 5-6 cups.
